I love Vegan Smorgas Sandwiches. Smorgas means open faced sandwich in Swedish. Little sandwich bites that usually consists of various types of breads and different topping, such as salads, hard boiled eggs, smoked salmon or sweet jellies. Pumpernickel bread and whole grain- beads are the breads that are commonly used.

The topping have a wide range of raw foods, which make this a healthy lunch idea. Including raw foods into your lunch helps you regulate your blood sugar, keeps you full longer and provides you with more energy. Adding raw foods to whole grains also keeps you satisfied much longer.

What I like most about an open-faced smorgas sandwich is that they are a bit lower on the carbohydrates. They are little pieces of bread, without the additional topped slice of bread. One slice of bread can make up to 4 pieces of smorgas. Most likely you won’t even miss the additional slice of bread.

In this post I want to share my favorite vegan Smorgas Sandwiches for Summer. Something I make at home quite often. It’s easy and it tastes fab!

Radishes and cucumber make a fabulous sandwich topping in hot weather. So light and refreshing and perfect for a savory style veggie sandwich. Plus hemp heart seeds for additional Omega 3s and super taste!

I used vegan style mayo for these smorgas recipes.

 

Ingredients:

1 slice of whole-grain bread

1 teaspoon vegan mayonaise

2-3 finely sliced radishes

4 slices of cucumber

1/2 teaspoon of hemp hearts

 

  • Spread Sandwich bread with vegan mayonaise. Garnish with radishes and cucumber and sprinkle with hemp hearts

 

Vegan Smorgas Sandwiches

 

One of my absolute favorite meatless toppings is fresh tomato with glover sprouts! It’s almost needless to mention that the tomato makes a great raw topping, but the addition of glover sprouts make this smorgas sandwich an favorite. Sprouts provide raw goodness. They are filled with valuable enzymes to keep your body healthy. Both, tomatoes and sprouts make a fantastic vegetarian sandwich topping.

 

Ingredients:

1 slice of whole -grain bread

1 teaspoon of vegan mayonaise

1 sliced medium tomato, sliced

a handful of sweet glover sprouts

 

  • spread sandwich bread with vegan mayonaise. Add tomato slices and sprinkle with glover sprouts.

 

 

Vegan Smorgas Sandwiches

 

When it comes to open faced sandwiches, avocado was almost a given, but since I make this avocado smorgas almost on weekly basis in my house I had to include it into this post. The buttery flavor of a perfectly ripened avocado goes so well with a high fiber whole wheat grainy bread. It’s a topping combo that will never be going out of style, it’s just too good!Β The nutritional benefits that come from avocado are just endless. Again this makes a great Summer sandwich topping, filled with essential potassium, which we tend to lack during hot Summer months.

 

Ingredients:

1 slice whole-grain sandwich bread

1 teaspoon vegan mayonaise

1/2 avocado, sliced

1 teaspoon of diced radishes and yellow peppers

sunflower seeds

 

  • spread sandwich bread with vegan mayonaise. Top with avocado slices and sprinkle with radishes, peppers and sunflower seeds.

 

Vegan Smorgas Sandwiches

 

 

Last but not least is my almond butter peach smorgas. Fresh peaches and almond butter go so well together. This is a great Summer Vegan Smorgas Sandwich, and for some reason I really enjoy it after a long run. The right amount of carbs and protein ratio in this sandwich is great to restore energy levels. Β Topped with shredded coconut make this sandwich bite irresistible!

 

Ingredients:

1 slice of whole-grain bread

1.5 teaspoon of almond butter

1/2 peach

shredded coconut flakes

  • spread almond butter on sandwich bread. Top with sliced peach and sprinkle with coconut flakes.
