I have been loving everything Coconut lately. It started off with my huge love for coconut oil and little by little I started incorporating coconut milk, coconut flour, coconut flakes, coconut yogurts, you name it into my diet. I’m truly loving the results of going mainly dairy free. My digestion has never felt better and my energy levels are always pretty much stable, which I believe comes from adding coconut oil and coconut milk into my diet. I love coconut milk in my smoothies. It provides a healthy amount of Vitamin D and B12 and is lactose free. 1 cup unsweetened coconut milk contains less than 1g of sugar. Hooray!
Now that the weather is getting warmer, here in Palm Beach we are already hitting the upper 80s this week, I’m in the mood for Pineapple Coconut Smoothies for breakfast or post run. Pineapple is a favorite fruit of mine. Besides the fact that it’s so delicious during hot weather, it also provides you with a good amount of enzymes, which is necessary for healthy cell function.
Plus the combination Pineapple Coconut is just one of the best tasting duos. One goes so beautifully with the other ! Yum!
Here is what you need:
1 cup unsweetened Coconut Milk
1 cup frozen or fresh Pineapple
1 tablespoon Maple Syrup
1/2 cup of ice if the your pineapple is fresh and not frozen
for an extra protein boost: 1 scoop of Protein Powder ( I use RAW by Tree of Life)
Put it all in a blender. Mix it and Enjoy!
