Smashed chickpea sandwich is a delicious meatless sandwich topping – filled with great nutrients and vegetarian protein. It’s a hearty sandwich, full of flavor and I particularly love that I can add it to your weekly meal prepping. Smashed chickpeas salad will stay in your fridge perfectly fresh for a couple of days.

Easy, delicious, healthy and convenient – who doesn’t like that?

Watercress is the secret weapon in this sandwich- a spicy mustard green that enhances any sandwich and gives vegetarian sandwiches an extra flavorful boost! Along with fresh clover sprouts, this sandwich delivers a great amount of enzymes, as well. Enzymes boost cell functions  in our bodies, including digestion and energy conversion. That’s why we feel extra energetic after eating enzyme-rich foods.

Tahini is another favorite. Heck – ever since I discovered Tahini, I pretty much put it in almost anything, including my brownies, no kidding. Look out for my Tahini dressing post these days – serious deliciousness!!

 

 

Ingredients:

2 slices of Bread, Multigrain works great!

1/4 cup Lettuce, I personally love baby kale, but any lettuce will work perfectly

1 can of Chickpeas, cooked

1/4 cup Greek Yogurt or Vegan Mayo or any mayo of your choice

1 tsp Tahini

1 tsp Olive Oil or Avocado Oil

Sea Salt

Pepper

Add ons:

Watercress

Sprouts

Chives

Avocado

 

Place chickpeas in a bowl and mash them with a potato masher. Add yogurt or mayo, tahini, oil, salt and pepper.

Layer baby kale onto bread slices, top with chickpea mixture, add some more baby kale, sprouts, a few leaves of watercress and dill and top it off with the second slice of bread.
