Just like almost everyone else in this world I am a huge chocolate chip cookie. In the last few months I have really grown to love paleo-friendly baking. I love that’s it’s actually possible to turn your favorite cake and cookie recipes into healthier recipes, without the use of refined sugars. Snacking with less guilt feels so much better. Who doesn’t like that? That’s why I love these Paleo Chocolate Chip Cookies. They are a great treat to satisfy a sweet tooth craving.

These paleo chocolate chip cookies are made with coconut flour and coconut oil. This recipe is absolutely scrumptious and it’s hard to tell the different from conventional chocolate chip recipes. As a matter of fact I like the clean taste of a paleo style cookies even more. These paleo-style chocolate chip cookies are not overwhelmingly sweet and recipes like this don’t send my blood sugar into a spiral effect. I feel that with all the paleo style cookie recipes I also don’t tend to overboard either – no need to eat the entire bag in order to feel satisfied. In addition, clean eating recipes like this don’t leave me tired afterwards.

It’s these kind of nutritious paleo snacks that actually keep you going and not feel like you need to take a rest on the couch.

Another plus about this paleo chocolate chip cookie recipe is the fact that my kids love them! Not that they know that it’s a healthier cookie or even care – but they really enjoy them, which makes me super happy in return.

 

Paleo Chocolate Chip Cookies

 

Ingredients:

3/4 cup coconut oil, melted and cooled

1/2 cup Coconut Sugar or 3/4 cup Maple Syrup

2 eggs, room temperature

1/4 cup Coconut flour

2 tbsp Almond Flour/Meal

1/2 tsp Baking Soda

1/4 Cup Chocolate Chips , dairy-free (I use Enjoy Life)

 

Preheat oven to 350 degrees.

Line cookie sheet with parchment paper.

In a bowl add coconut oil, coconut sugar and eggs. Blend.

Add coconut flour, almond meal, baking soda.

Last, add chocolate chips.

With 2 teaspoons scoop cookie dough onto cookie sheet, each cookie about 1.5″ apart.

Bake for 8-10 minutes or until edges start to get golden.

Cool down and enjoy with a big glass of your favorite nut milk!
