I have so many great memories of growing up with Farina or Cream Of Wheat, also known as Wheat Farina or Semolina. It was a huge stable of my diet as a kid and I cannot remember ever not liking my bowl of Farina topped with cinnamon and sugar.Ā  Organic Semolina is actually pretty prefect for growing bodies and it provides your body with extra energy.

During my first pregnancy I switched to almost everything organic in my diet – and it was during that time when I discovered organic hot cereal made from organic wheat. I wanted to avoid the extra additives and pesticides from conventional brands. I was super surprised to discover that the Organic Wheat Cereal tasted even better and creamier than their conventional counterparts. Over the last few years I have stepped away from many dairy products and I prefer a non-dairy milk anytime of day over regular cow’s milk . My digestion feels so much better and it makes me feel less weighed down. Needless to say that I have learned to prepare my hot cereal with unsweetened vanilla almond milk and I have to say it tastes just as good. Super creamy, smooth and sweet! So Yum!

 

Semolina Pudding

Many people are used to prepare their bowl of hot cereal with just water – which is also a great alternative. It’s a bit more plain but easy digestible, which is s important for keeping your energy levels up. When my kids started eating solids regularly I prepared a warm soothing bowl of organic cereal for them almost every day and they still loved it – actually my whole family does – the warm version just as much as the chilled pudding.

Preparing your Hot Cereal the usual way and then storing it in the fridge for a few hours makes a great tasting nutritious pudding.

There is always an ongoing debate in our house whether we make vanilla or chocolate flavored Semolina Pudding. That’s how I got the idea to make it a double layered pudding – Vanilla and Chocolate. Topped with fresh fruit it makes a nutritious and wholesome delicious meal.

Here is what you need for 2 servings:

2 cups Almond Milk ( I use Vanilla Unsweetened)

1/2 cup Hot Cereal ( I use Organic Bob’s Red Mill)

2 tbsp Organic Cane Sugar

1 tablespoon Cacao Powder

fresh fruit, like berries, kiwi and coconut flakes

 

Preparation:

 

  • in a saucepan bring the almond milk to a boil

 

  • remove from flame and stir in cereal

 

  • keep stirring while bringing it back to a boil

 

  • remove from flame and keep whisking for a bout 2-3 minutes until mixture thickens

 

  • pour one half of mixture into bowl or jars

 

  • add cacao powder to the remaining cereal in saucepan, mix well and then pour it over vanilla layer

 

  • after letting it cool down, store in fridge for at lest 2-4 hours or overnight

 

  • top with fresh fruit

 

Note: it tastes tastes great both ways-Ā  slightly warm or chilled in the fridge:)
