These Mini Maple Blueberry Muffins are made with maple syrup. They have just the right amount of not-overwhelming sweetness and are a wonderful snack when you have a sweet tooth. I personally find that maple syrup satisfies a sweet tooth craving much better than regular sugar, you’re satisfied faster and therefore eat much less of it. I like that maple syrup provides you at least with some iron, when basic regular table sugar leaves you nutritionally empty.

How to make Mini Maple Blueberry Muffins:

6 tablespoons Butter, unsalted
1/2 cup plus 3 tablespoons Maple Syrup
2 teaspoons Vanilla
2 Eggs
2 cups Flour
3 teaspoons Baking Powder
1/4 teaspoon Salt
1 cup Milk ( I use unsweetened almond milk)
1 – 1 1/2 cups fresh Blueberries

preheat oven to 350 degrees
Mix butter with hand mixer until smooth, add maple syrup and vanilla and eggs. Slowly blend in flour, baking soda, salt and milk and bake 8-10 minutes or until golden brown.
