There is a barely a day in the year when I don’t have salad. Classic Mesclun is my favorite and always my top choice. It’s an easy, simple,nutritious, light and flavorful salad mix that goes with any dish as the perfect side salad or as a main dish just on it’s own.
I noticed a while ago that if I do not incorporate enough raw foods into my daily diet I feel the effects within a few days. My digestion is not functioning well, my energy level drops and I feel much more bloated. The enzymes in raw foods such a lettuce make your body run much more efficiently and proper.
Lettuce is the ideal raw food for me. When prepared right a salad is super delicious and it is my favorite dish overall. I barely can even enjoy any other dishes without a green side salad. That’s how much I have gotten used to eating salad over the years. Eating raw foods like salads also gives me the energy for my daily runs, without them I would probably slack off here and there.
I love to add high quality extra virgin olive oil and fresh lemon juice, sunflower seeds or pumpkin seeds, avocado and a bit Parmesan cheese. Yum! That’s the usual standard salad in my house almost every day. Of course I mix it up with other foods such as a hard boiled egg, cold wild salmon, peppers and beets. The add-ons are endless!
However, over time I have learned to really love the simplicity of a salad. I used to add croutons and creamy dressings, but I soon found out that I can actually skip these empty calories and stick with a much cleaner eating salad by adding only foods that have nutritious value.
So eating my daily salads, doesn’t only taste super great, but it adds so much quality nutrition into your day!
