Kale is probably my all-time favorite green and kale salad with salmon is a wonderful tasty match.

I first started including kale into my diet a few years ago, when everybody was talking about this super green as  the absolute “In” super veggie to eat. I was instantly hooked on this green powerhouse. Not only did I love the way it tasted, but I loved the way it made me feel! I had more energy on the days I ate kale, and believe it or not, raw kale curbed my cravings for sugary sweet treats. For some reason I don’t crave dessert after eating raw kale. Did you ever notice that beautiful side effect? Fresh enzymes leave your body fully satisfied.

Kale is also very filling due to its high fiber content. You will notice that after eating raw kale you tend to be less hungry throughout the day.

Filled with enzymes, iron and Vitamin K, this super-green truly belongs in the Hall of Fame of Superfoods!

If you don’t have the time to buy a fresh bunch of kale, you can buy kale conveniently pre-washed and already pre-chopped these days in bags at your local supermarket.

When I buy fresh Kale, I rinse it and dry it with a salad spinner, before storing it inside a Ziplock bag in the fridge . That way the leaves are not moist when stored and remain fresh and crisp much longer.

I love Feta cheese in my kale salads, along with garlic and olive oil, for that beautiful Mediterranean taste! Raw Pumpkin Seeds and Hemp Hearts for more healthy crunch!!

 

 

Kale Salad with Broiled Salmon - a tasty and nutritious Superfood Salad

 

Ingredients:

serves 4

4 cups of fresh Kale

3-4 Salmon Fillets, broiled and chilled

3/4 cup  Feta Cheese

3 tbsp of Raw Pumpkin Seeds

2 tbsp Hemp Hearts

2 tbsp Olive Oil or Avocado Oil

1 tsp Apple Cider Vinegar

Sea Salt

Black Pepper

Garlic Powder

 

Instructions:

The day before or a few hours before

Broil salmon at 350 degrees inside the oven for about 15-18 minutes. Let it cool down and store in fridge.

Chop kale into small pieces. (Pre-washed kale is usually chopped already)

In a bowl whisk together avocado oil, apple cider vinegar, sea salt, pepper and garlic powder.

Cut salmon into little pieces.

Add kale to bowl, along with feta cheese, pumpkin seeds and salmon and blend well.
