This homemade Fennel Blueberry Granola will simply rock your breakfast!
I’m not even too sure why it has been taking me so long making my own granola – one of the simplest kitchen tasks ever!!
Granola is one of those things I have always considered buying from the box, for whatever reason…when it really only takes minutes out of my day to mix all those simple ingredients together, spread them onto a baking sheet and let it bake them for 30 minutes..
Fennel is one of my favorite herbs. It’s is a flowering plant and believe it or not, it belongs to the carrot family. It’s a great soother for upset tummies, it enhances digestion and its high aroma tastes similar to the sweet flavor of anise. I love drinking fennel tea after a meal at night, and my kids drank it as a tummy and colic soother when they were babies and toddlers. Fennel tea is widely used in Europe for babies and toddlers.
This fennel blueberry granola is therefore easy on your digestive system as well – fennel seeds prevents bloating and make granola much more digestive.
You can buy fennel seeds in tea bags at your local health food store or in the spice section at your local supermarket.
Infusing granola with fennel tea or other teas gives your basic granola a whole new flavor dimension with many great healthy benefits.
Here is what you need:
3 tbsp Fennel Seeds or 2 Fennel Tea Bags
2 cups Oats
3/4 Sunflower Seeds
1/3 cup Chia Seeds
1/2 cup chopped Pecans
1/2 cup shredded Coconut
1/4 Coconut Sugar
2-3 tbsp Raw Honey
1 tbsp Vanilla
1/4 cup Coconut Oil
3/4 cup dried Blueberries
add- on: mini Chocolate Chips
Preheat oven to 320 degrees.
Line a baking sheet with parchment paper.
Bring 3/4 of water to a boil. Add fennel seeds or tea bags and let it steep for about 10 minutes.
In a bowl, combine oats, sunflower seeds, pecans, coconut and chia seeds.
Add coconut sugar, raw honey and vanilla to tea infusion.
Pour tea mixture over oat mixture and mix well.
Spread oat mixture onto parchment paper lined baking sheet and bake for about 30 minutes.
Every 10 minutes stir the granola mixture a bit.
When granola is fully cooled down, add dry blueberries and store it in an airtight container.
If you are a chocolate fan for breakfast or lunch or dinner, or for whatever time of day, add some mini chocolate morsels to your homemade fennel blueberry granola!
