Healthy Macaroni Salad,

This Macaroni salad is equally awesome for kids and grown-ups. as soon as my kids got over the hump of actually trying out different textures of food, this salad became an instant hit. I usually make a big bowl that lasts for 2 days. It tastes even better the next day, after marinate it in the fridge for 24 hours. It’s perfect for Summer lunches, keeps up well in lunch boxes and perfect as an outdoor barbecue salad.

Here is what you need to make a Healthy Macaroni Salad  :

2 cups Macaroni Elbow Pasta
1 cup crumbled plain Feta-cheese ( I use plain and cow’s milk since my kids like everything milder)
2 cups Organic Corn ( white or yellow)
1 cup finely diced Peppers
2 cups Cherry Tomatoes, halved
Olive Oil
optional: Garlic Powder & Basil Leaves

Boil the pasta until al dente, strain and set to set until it has cooled off
when pasta is ready add all ingredients and add olive , salt and pepper according to your taste buds
mix well and serve.
