I prefer Raw Almond Butter for these Date Coconut Almond Balls but if you prefer the taste of roasted almond butter more than you can certainly substitute roasted almond butter for this recipe. Note: Raw Almond Butter does provide more enzymes and is easier to digest.
Unsweetened Organic Coconut Flakes. Shredded coconut flakes make these energy balls super tasty and delicious. They really compliment the flavors of the dates and almonds – making these date coconut almond balls a win-win combination.
One of the best things about this recipe is that they are very easy to make. If you don’t have a food processor they can also be made in a blender. You just need to stop in between the pulsing to scrape down the mixture from the side. But no worries, they do work in a blender just as well.
Only 3 ingredients make this raw healthy super snack ultra convenient!
Here is what you need:
for about 12 balls
3/4 cup of Raw Almond Butter, unsweetened ( as mentioned above, you can also use Roasted Almond Butter)
3/4 Cup Organic Unsweetened Coconut Flakes
- add all ingredients in a food processor (or blender), blend until smooth
- pinch pieces of the dough and shape them into balls, about 1 1/4 inches wide
- in a small bowl, add the coconut flakes and roll and cover almond butter balls in the coconut flakes until coated
- store inside fridge
Tip: These Date Coconut Almond Balls really taste great after being cooled for 24 hours. Sooo yummy!
I store mine in an air-tight container inside the fridge.
