Creamy Split Pea Soup

I love this soup. It is low fat, high in fiber and peas are excellent for blood sugar regulation – so you are less likely you reach for that candy bar mid-afternoon, if you had a split pea soup for lunch.

Recipe to make Creamy Split Pea Soup:

1 onion
1 potato
1- 2 tbsp. butter

sauté all three ingredients for about 5 minutes

add
1 package organic peas

sauté for another 5 more minutes

add
1 ( 1 quart) container organic chicken broth

let simmer for 15 more minutes

add mixture into blender, puree it until smooth consistency, add salt and pepper as you like and Enjoy!
