Yepee! Crazy Cake with Chocolate Ganache made me so happy when I found this recipe online over at Sweetlittlebluebird.com. I always indulged on this sort of cake at Whole Foods in NYC ( it was a different name), and I always wondered what kind of recipe this cake was.
I remembered the ingredients so well, that when I stumbled over the recipe online, I knew that this was the cake that I have been looking for!
The original recipe suggests that you combine and mix all ingredients in an already greased baking dish. So, no mixers and dirty bowls. That’s always great! Just a spatula and greased baking dish. I was really surprised how well this dough mixes inside the greased dish. I stirred it for like 4 minutes until it was clump-free. Nice and easy. I used a 9-13 baking pan , but a smaller one works just as well, if you want your cake to be a bit higher.
So here is what you need to make Crazy Cake with Chocolate Ganache:
1 1/2 cups flour
1 cup sugar ( I used cane sugar)
1 tsp. baking soda
1/2 tsp. salt
1 tsp. white vinegar
1 1/2 tsp. vanilla
5 tbsp. vegetable oil ( I used canola oil)
1 cup water
1 1/2 cups semisweet chocolate chips
3/4 cup heavy cream
1 tsp. vanilla
Preheat oven to 350 degrees.
As mentioned above, mix all ingredients in a greased 9x 13 baking dish until you have a clump-free consistency. Don’t worry- it works! Bake for about 18 minutes. If you use a 8x 11 dish, bake it for about 30 minutes.
Let the cake cool down.
Meanwhile microwave the heavy cream for about one minute on high. Take it out, add chocolate chips and vanilla and blend it until you have a nice smooth Ganache. Pour it over the cake and let it set in the fridge for about one hour. Cake tastes best at room temperature.
