If you have been reading my blog for a while you know how much I love banana bread. Especially if you make it with plenty of nutritional goodness. This Coconut Butter Banana Bread is a double win – irresistibly delicious, grain and refined sugar-free!
I love banana bread especially during times when I’m very active, like training for a marathon. Bananas are a yummy way to add some much needed potassium back into your system for recovery and help your body to re-energize. Grain-free banana bread made from coconut and almond flour is an absolute favorite.
Almonds provide good amounts of plant-based protein. The real secret ingredient of this banana bread recipe is the coconut butter. Coconut butter is not coconut oil – coconut butter is made from shredded dry coconut flakes. You can make your own (which saves you a great amount of money) or you can conveniently buy it at a health food store. Coconut Butter gives your baked good a wonderful buttery soft taste and texture without any cholesterol.
The coconut butter drizzle gives this banana bread recipe the final finishing touches. Hooray for easy, vegan and healthy icing! You won’t even believe that this type of glaze is sugar-free, cholesterol free and no artificial flavors.

Here is what you need for the Coconut Butter Banana Bread with Coconut Glaze:
1 cup Almond Flour
3/4 cup Coconut Flour
1 tbsp flax meal
1/2 tsp Salt
3 – 4 Bananas
1/4 cup Coconut Butter
1/2 cup Maple syrup
1 tsp Vanilla
1 tsp coconut oil
1-2 tbsp coconut butter
Preheat oven to 350 degrees.
Grease loaf pan with coconut oil
In a large bowl add almond flour coconut flour, salt and baking soda. Blend.
Now add Coconut Butter, Maple Syrup and Vanilla and blend it with a hand mixer.
Blend diced bananas into batter.
Add batter to loaf pan and bake for about 45 minutes or until wooden stick inserted comes out clean (I always think that’s the best bet)
Now the part that makes this banana bread irresistible: The coconut butter glaze!
When banana bread is not very warm anymore and almost cooled down, drizzle the coconut butter with tablespoon across the loaf.
Coconut butter hardens at room temperature so once the banana bread is cooled down the coconut butter drizzle with harden as well.
