As usual, “Hooray for Beans!”
There are so many delicious ways to prepare Chickpeas and this Chickpea Protein Salad is one of them. Chickpeas, Avocado and Feta Cheese all rounded up with a tangy lemon and olive oil vinaigrette. Chickpeas, also known as Garbanzo Beans are a great source of vegetarian protein. They are part of the legumes family. Like all legumes they are very beneficial for cardiovascular health. Their high fiber leaves you satisfied much longer and you will less likely experience a drop in blood sugar after eating beans. The fiber in chickpeas helps in the protection of colon cancer and other colon problems. Chickpeas are a great source of iron as well.
This Chickpea protein salad is a wonderful non-meat dish alternative without the fat content of meats.
It leaves you fully satisfied without weighing you down due to their low GI. The avocado compliments the chickpeas’ nutty flavor and the lemon juice gives it that nice tangy summery feel. Avocado is another powerful super food. High in monounsaturated fats and Omega 3s, all beneficial for heart health and Cholesterol levels. Feta Cheese is my choice of cheese when it comes to any Mediterranean dishes and the perfect addition to all summer salads. And so simple to make! Perfect for lunch, snack or post workout. The protein helps your workout recovery.
Here is what you need:
1 cup of Chickpeas, cooked. You can use canned of course.
1/2 of an Avocado
1/2 cup crumbled Feta Cheese
juice of 1/2 Lemon
1 tsp. Olive Oil
1) put chickpeas in a bowl
2) add lemon juice, olive oil, salt and pepper
3) add Feta Cheese
4) Add cubed Avocado, toss lightly and serve
Note: I usually add the Avocado last, otherwise it will break while you are mixing and tossing salads. The salad that way will look much cleaner.
