A nutritious filled breakfast is the best start of the day.

It gives you more energy throughout the morning, helps to stabilize your blood sugar, so you’re less likely to overeat on high sugary foods later in the day and it jump starts your metabolism. One of the reason I used to neglect my breakfast was the fact that sometimes I simply didn’t have the time to prepare breakfast for myself. Baking these morning muffins in advance and freezing them makes sure that we always have a quick breakfast on hand. They hold up well in my son’s lunchbox and I even eat them when I need an energy snack before a run. These muffins contain complex carbohydrates and fiber, which helps you keep full longer. They are low in fat as well. Flaxseeds provide a nice amount of Omega 3s, for healthy brain function, and blueberries contain antioxidants. These morning muffins are super tasty. I appreciate any high nutritious recipe that my kids like as well. It makes life so much easier when you know the whole family enjoys it.

I usually bake these morning muffins in a paper cup lined muffin pan so they have a nice shape. You can substitute the coconut sugar with cane sugar or brown sugar if you like, and the coconut oil with canola oil. These Blueberry Morning Muffins will taste just as good.
