Berry Chia Porridge – a healthy vegan dessert or snack idea made with berries and no refined sugars!

Do you have a childhood food memory that you loved but you basically have outgrown it for the sake of a healthier lifestyle? 

That's how I feel about semolina pudding - a cream of wheat style pudding. Usually made with milk and sugar.

One of my favorite grown-up pudding passion is chia pudding. I have started to love this insanely nutritious snack. 
I love that it is low in calories, and high in Omega 3 Fatty Acids. 

It's great to know a tasty refreshing snack comes with so many benefits.

But ... have you ever thought about combining the two to an ultra delicious favorite pudding?

The result is a soft and creamy style chia pudding with the tangy sour berry flavor of the berries and toasted aroma of the shredded coconuts. 

Yum! I promise you it's completely irresistible and you wonder how something so nutritious and healthy can be so delicious.

Here is what you need:
makes 1 serving

1 cup of coconut milk

2 tablespoons cream of wheat ( or semolina) I love Bob’s Red Mill – tastes super great!

2 tablespoons chia seeds

1 tablespoon honey

1/2 cup of mixed berries, frozen or fresh

1 tablespoon honey (yes, 2 altogether)


1 tablespoon cream of coconut

1 teaspoon of shredded coconuts


  • in a small saucepan heat berries and add honey, set aside

  • in another saucepan bring coconut milk to a boil

  • just at the tip of boiling remove from heat and add cream of wheat

  • return to low heat

  • keep whisking until coconut milk and cream of wheat start firming, about 2-3 minutes

  • add 1 teaspoon of honey and chia seeds and whisk until well blended
  • now add cream of coconut and blend it in

  • in a small bowl or jar add berry mixture

  • top with cream of wheat chia mixture

  • refrigerate for at least 3 hours, I prefer overnight

  • right before serving top with shredded coconut flakes

  • Enjoy!
