Oh so yummy avocado-banana mini muffins packed with mono-saturated fats, potassium and Vitamin B6 from the avocado and bananas and Omega 3s from the flaxseed, these little cakes are real power houses. The flaxseed also gives them a nice nutty-like flavor and maple syrup provides just the right amount of sweetness. There are great in your kids’ lunchboxes, for Weekend Brunch or simply as a healthy snack.

How to make avocado-banana mini muffins:

1/3 cup butter, softened
1/2 of an avocado
2 eggs
3/4 cup brown sugar
1/4 cup maple syrup
1 1/2 cups flour, unbleached
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla
1 tblsp ground flaxseeds
3 bananas

preheat oven to 385 degrees

with a hand mixer, whip butter and avocado until smooth and creamy consistency
add sugar, maple syrup, vanilla and salt, mix for about 2 minutes
add flour, baking soda, then flaxseeds and the mashed bananas, mix for another 2-3 minutes and pour into oil sprayed mini muffin pans and bake for about 8-10 minutes.
