Like I mentioned in other posts, I am crazy about anything Banana Bread lately. The super moist Banana Bread recipe here on this blog is the best one I know. It really is so soft and spongy. I’m always on the lookout for high quality, nutritious ingredients for the health of my family and therefore I’m constantly experimenting with healthier options. So I’m always trying out recipes with high quality fats, like coconut oil, avocados or like in this recipe, almond butter. My main goal with this recipe was for my kids to get sufficient iron and protein in their diet. It is not always easy to get kids to like iron and protein rich foods. Almond butter is a great source. My kids love my traditional homemade Banana Bread, the recipe is listed on this site. We eat it at least once a week. That was the main reason why I needed to update it with higher quality ingredients. When you eat something that often, you better make sure it is nutritious, for growing bodies, as well as for grown up bodies. Quality matters. You should always make sure you incorporate quality, no matter what age. Butter for me is a once in a while treat. I wouldn’t eat it everyday because it’s not good for my cholesterol. The almond butter is the perfect compliment, a cholesterol free high quality fat. The bread turned out to be just as soft as when it is baked with butter and the taste was a smooth buttery nutty flavor. I replaced half the sugar with 100 % pure maple syrup. Another favorite of mine. Adding 100 % pure maple syrup provided some additional good-for-you nutrients, like manganese, zinc, calcium, magnesium and potassium. Obviously a much better sweetener choice. Some of the flour I replaced with Almond Meal (or Almond Flour), more iron rich ingredients. Since I became a mother I try to make foods as nutritious as possible. Every bite counts.
You will be so surprised how good this Almond Butter Banana Bread tastes.
Here is what you need:
makes one loaf
preheat oven at 350 degrees
1/2 cup creamy Almond Butter, salted or unsalted
1/2 cup Cane Sugar
1/2 cup Pure Maple Syrup
1 cup unbleached Flour
1/2 cup Almond Flour
1 tsp Baking Soda
1/4 tsp. Sea Salt (skip if you’re using salted Almond Butter)
3 tbsp. Flaxseeds
3 Bananas, diced
1) blend Almond Butter with a mixer until creamy (30seconds)
2) add Eggs, Sugar and Maple Syrup and continue
3) add Flour, Baking Soda, Salt and flaxseed
4) add Bananas and continue mixing until well combined
Put batter in well greased loaf pan and bake for about 45 minutes. Let cool and Enjoy!
